It’s been a gorgeous summer in North County San Diego - while we had May Gray and June Gloom, the past few weeks have been sunny and warm. All the better to sit outside and enjoy the best fruits of the year!
Watermelon, strawberries, plums - just a few of my favorite fruits. And when I stumbled upon this recipe from Whole30, I knew I had to give it a try.
It sounds pretty simple - combine cucumber with watermelon, dressed in lime juice, mint and sea salt (I used a sea salt I bought earlier this summer when we were in Sitka, Alaska; a spruce tip sea salt from Alaska Pure Sea Salt).
The result was pure magic! If summer had a flavor, it would be this salad. Perfect with grilled chicken and my mom’s sour cream cucumber dill salad, paired with a fun mocktail or cold prosecco. Dining al fresco doesn’t get better than this!
